Knapp Winery and Vineyard Restaurant has opened for the 2014 Season. Located on the Cayuga Lake Wine Trail, on Ernsberger Road, three-quarter miles from the lake, this full service restaurant will be open from 11AM to 5PM daily until the end of November. John McNabb, Executive Chef has created a menu that largely comes from local farms and businesses. “I have immersed myself in creating my menu components from scratch and using as many local ingredients to capture the flavors of the Finger Lakes”, says McNabb.
Many of his meat products are sourced from Schrader Meats only 2.75 miles up the hill. Brisket, pork, pork bellies, and turkey are products that he cures and smokes himself. As an example, the bacon from Schrader was delivered on March 17, he cured the meat for seven days in a cornucopia of Knapp Brandy, New York maple syrup, Seneca Salt, coriander, cardamom, star anise and black peppercorn. He then smoked it for six-and-a-half hours and will layer that on his new Bork Burger, a mix of ground pork and beef. Meats are not the only items smokin’ at Knapp these days, select cheeses are also being smoked to offer more complex flavors and textures. These multi-sensory delights will enhance the food and wine experience at Knapp.
Inspired by flavor and being able to create a product from scratch, Chef McNabb has also composed a symphony of delicious homemade items that are rooted in many of his entrees. Look for his fresh foccacia alongside the garden salad. Experience the freshly made country paté as part of the assortment of appetizers. Munch on the widely popular duck arancini. Although the emphasis might be on smoked meats, the vegetarian options are plentiful led by a quinoa and veggie burger, falafel, eggplant tower, caponata and a large assortment of delightful sides and veggies. All in all, it is fair to say that Knapp’s Vineyard Restaurant offers a flavorful and umami (savory) rich menu for the 2014 season.
