1st Course poached pear stuffed with chevre and topped with granulated sugar
and caramelized. Served over a bed of baby arugula with walnuts,
and a raw honey tarragon vinaigrette

Roasted red pepper and poblano bisque with smoked gouda and served with a crostini with
chipotle rouille

Charred sirloin filet with a blood orange and balsamic gastrique, citrus whipped potatoes,

Cayuga Creamery's Bananas Foster ice cream made especially for Knapp in a pool of
Grilled banana puree. Served with a flambed Brandied caramel sauce prepared tableside.
